Have you ever wondered what a purple carrot would taste like? Researchers with the Agricultural Research Service are producing carrots in a variety of colors, from yellow to purple. Each kind of carrot contains a variety of nutrients, pending their color. For example, yellow carrots provide the nutrients needed to maintain good eye health. Red carrots contain beta-carotene. And, purple carrots are full of antioxidants. Carrots are rich in vitamins A and C. Just half a cup of freshly cut carrots contain 360% of vitamin A, which is necessary to: keep your skin looking young and fabulous, maintain strong bones and teeth, healthy eyes, and protect your body from developing infections. Carrots are also loaded with calcium, iron, folate, potassium, and fiber (which is necessary to maintain a healthy digestive system and  control your sugar and cholesterol levels).
