According to the Fruits and Veggies Matter Web site, chayote, a squash, historically formed a very important part of the Mayan and Aztec diets. This vegetable is light green in color, pear-shaped, and is mainly consumed in Latin-American and Caribbean cultures. In the U.S., chayote is produced in California, Florida and Louisiana. Fruits and Veggies Matter also states that this vegetable contains only 11 calories, provides 47 % dietary fiber, and 17 % vitamin C of the daily value. It is popularly used in soups and strews and contains a small potion of calcium and iron.
