Plantains

Rich in vitamin A, potassium, and fiber

Plantains are widely used in the Caribbean, and in Central and South America. They are particularly a household staple in the following countries: Cuba, the Dominican Republic, Puerto Rico, Costa Rica, Honduras, Panama, Bolivia, Colombia, Ecuador, and Venezuela.  According to the Web site Fruits and Veggies Matter, half a cup of raw plantains contain about 90 calories. Plantains are generally cooked though. Unless very ripe, they are not suitable for eating raw. One plantain can contain about one-fourth of the daily value of vitamin C, which is necessary to maintain a healthy diet. In lesser amounts, plantains also contain: vitamin A, iron, dietary fiber, potassium, folic acid and a gram of protein.
